“If she were on an inspection visit, she said, she would go home directly after finishing dessert and paying her bill, and begin filling out her report, which is made in the form of entries in a classification form supplied to all Michelin inspectors. She would list every ingredient in everything she ate, and the specifics of every preparation. She would rate these according to several criteria, including quality of the products, mastery in the cooking, technical accuracy, balance of flavors, and creativity of the chef. Then she would fill out the section that deals with setting, comfort, and service—and that determines the number of couverts the restaurant will earn…. For a restaurant like Jean Georges, filling out the reports would take two to three hours. A Chinese restaurant might take an hour.”

My last cappuccino at Tazza d’Oro, the best, best, best coffee, hands down, in all of Rome. I seriously miss this place, a lot.

This is the Dai Due menu for our studio lunch on Monday at Rain Lily Farm. Everything down to the mustard came from central Texas farms. Everything was organic. The eggplant and mint purée, the Hubbard squash, and the unbelievably sweet honeydew were big hits. It just felt so quintessentially Austin to be eating an organic meal on the front yard of a small farm in the middle of the city.

Authentic Venetian tiramisu. And it was amazing. Even the tiramisu in Rome couldn’t compare.
